BSEH Students Present on Foodborne Illnesses and Outbreaks

BS Environmental Health (BSEH) students gave their presentations today on foodborne illnesses and/or outbreaks as part of the EHST 3200: Food Sanitation Practices and Principles course, which is one of the core courses in the ECU BSEH degree program, this Spring Semester 2023. Each student was asked to research their assigned topic (i.e., foodborne bacteria, viruses, parasites) using professional journals, newspapers, websites, current and past articles on outbreaks, recalls of food products, etc.  Student presentations included:

  • Name and description of foodborne organism (e.g., bacteria, virus, parasite)
  • Method of transmission
  • Symptoms and onset time of illness
  • Foods associated with the foodborne illness
  • Prevention of the foodborne illness
  • “In Da’ News” article
